3 Tbs olive oil
1 medium onion, finely chopped
1 (4oz) chopped green chiles, drained
3 Tbs gluten-free flour
2 tsp ground cumin
2 (16oz) great northern beans, no need to drain
1 (14.5oz) can chicken broth*
1 1/2 cups chicken breast, finely chopped
sour cream (optional)
shredded monetary jack cheese (optional)
1. In large skillet, cook onion in oil for 4 min or until transparent.
2. Add chiles, flour and cumin, cook and stir for 2 min. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 min or until thickened.
3. Add chicken; cook until hot.
4. Garnish with sour cream, shredded monetary jack cheese and salsa, if desired.
