1 lb ground turkey
1 1/4 cups green bell pepper, seeded and chopped
1 jalapeno, seeded and chopped (optional)
1 medium onion, chopped
3 small zucchini, sliced
3 Tbs chili powder
1 1/2 tsp sugar
1 tsp red pepper flakes
2 tsp ground cumin
1/2 tsp dried oregano leaves
3 (14.5 oz) cans no-salt-added stewed tomatoes, undrained
1 (16 oz) can kidney beans, drained
1 (15 oz) can black beans, drained
1 (16 oz) can no-salt-added tomato sauce
1/2 cup shredded cheese (optional)
1/4 cup chopped onion (optional)
1/2 cup sour cream (optional)
1. In large saucepan, heat oil over medium heat. Add turkey; cook until brown, about 5 minutes. Add peppers, onion and zucchini, cook for 5 minutes.
2. Stir in the remaining ingredients, bring to a boil.
3. Cover, reduce heat and simmer for 1 hour, stirring occasionally. Serve with cheese, onion and sour cream if desired. Enjoy!
