These melt-in-your-mouth cream cheese cookies are one of my families favorites! The cookies stay soft and moist for days… if there are any left.

Yields 32 cookies
1 (15oz) gluten free cake mix
1 (80z) pkg cream cheese, softened
1/4 cup butter (1/2 stick), softened
2 tsp vanilla
1 (16oz) cream cheese frosting
1. Preheat oven to 350°.
2. In large bowl, cream together butter and cream cheese. Blend in egg and vanilla. Gradually add cake mix to batter, combine until well-blended. Scoop rounded teaspoon sizes onto greased baking sheet.
3. Bake on top rack for 9-11 minutes, until edges are golden brown.
4. Let cookies set on hot pan for 5 min before transferring to wire rack. Cool on wire rack.
5. Once cookies are completely cool; frost with cream cheese frosting of your choice, and decorate with sprinkles.
