Homemade Orange Julius Recipes


My new favorite way to cool off  is with a refreshing Homemade Orange Julius.

Start to Finish: 5 minutes
Yields 4 small glasses

Orange Julius
Ingredients

6 oz (2/3 cup) frozen orange juice concentrate
1 cup milk
1 cup water or soda water
1/4 cup sugar
1/4 cup powdered sugar
1 tsp vanilla extract
1-1/2 cups ice cubes

Directions
1. Combine all ingredients except ice cubes to blender.
2. Blend for 1-2 minutes. Adding ice cubes one at a time. Pour mixture into glasses. Enjoy!

 

Strawberry Julius
Ingredients

1 cup strawberries, thawed, frozen or fresh
1 cup milk
1 cup water or soda water
1/4 cup sugar

Strawberry Orange Julius – Mix it up for a Strawberry Orange Julius by following the directions above and use 1/2 cup strawberries with 3 oz (1/3 cup) frozen orange juice concentrate. Have fun.

Traditional Gluten Free Chicken Enchiladas

These traditional, crowd-pleasing enchiladas use simple ingredients, and are fairly easy to make.

Prep Time: 30 minutes
Cook Time: 15 minutes
Serves 6

Ingredients
1 lb potatoes, peeled & cut into 1-inch cubes
1/3 cup red onions, chopped
2 lbs boneless, skinless chickens breasts
1 tsp Mexican seasoning
1/2 cup peas
1/2 cup corn
16 corn tortillas
Salt and pepper to taste
1/2 cup mild cheddar cheese, shredded

Toppings: shredded mild cheddar cheese, onions, sour cream, cilantro and salsa.

Directions
1. Preheat oven to 350 degrees. Set aside a 9×13-inch pan.
1. In large saucepan, fill 2/3 of pan with water and bring to a boil. Cook potatoes in hot water for 10 minutes or until cooked through. Meanwhile, in a small saucepan; sauté onions with olive oil for about 5 minutes. Set saucepan aside for tortillas. Drain cooked potatoes; cut into 1/4-inch size cubes, set aside.
2. In large skillet, heat olive oil and cook chicken over high heat for 5 minutes on each side or until cooked through with no pink. Transfer chicken to cutting board and shred into bite-size pieces.
3. In large saucepan of potatoes, add red onions, shredded chicken, peas, and corn. Mix well; salt and pepper to taste.
4. In small saucepan, warm oil over high-heat. Cook tortillas in hot oil for 5-10 seconds on each side. Transfer cooked tortillas to paper towel; dab with paper towel to remove excess oil. Stuff tortillas with enchilada mixture and sprinkle with cheese. Roll-up tortillas and place them folded side down in 9×13 pan.
5. Bake in preheat oven for 15 minutes or until enchiladas are warm. Serve with desired toppings. Enjoy!

Double this batch – This recipe stores easily and is easy to reheat. Double this recipe and simply freeze desired amount of enchiladas in a sealed Ziploc bag before baking. Let the enchiladas thaw on the counter or in the fridge when ready to eat. Bake in the oven as directed above for 15 minutes or until enchiladas are warm.

Storage – Store leftover baked enchiladas in airtight containers in the fridge, and simply reheat in the microwave for 30-40 seconds. Store the leftovers in individual containers, instead of large containers, for easy-to-grab meals and snacks for on-the-go .

Gluten Free Chocolate Oatmeal Cookies with Crystallized Ginger

I woke up today feeling terribly nauseous. My love picked up a package of crystallized ginger at the store to naturally help reduce the nausea. Unfortunately, I quickly learned that eating pure crystallized sugar can be difficult due to its powerful flavor. Thankfully, I was able to whip up these cookies in no time, and have fallen in love with this recipe. This may  now be every pregnant women’s dream recipe.

These soft, chewy gluten free cookies are the perfect blend of oats, chocolate and ginger. The smooth chocolate and crisp ginger combination in these cookies will keep you coming back for more.

Prep Time: 20 minutes
Cook Time: 15 minutes
Yields 24 cookies

Ingredients
3 cups Gluten Free ‘Bob’s Red Mill’ Old Fashioned Oats
1 cup Gluten Free All Purpose Flour
1 tsp salt
t tsp baking soda
1/2 cup (1 stick) butter, melted
1-1/4 cup brown sugar, packed
2 large eggs
1/4 cup honey
2 tsp vanilla extract
1-1/4 cup chocolate chips
3/4 cup crystallized ginger, finely chopped

Directions
1. Preheat oven to 350°. Line 2 large baking sheets with parchment paper.
2. In food processor or blender, combine oats, flour, salt and baking soda. Pulse until oats are completely chopped, about six-1 second pulses.
3. In large bowl, beat melted butter and brown sugar until fluffy, 1-2 minutes. Add eggs, honey and vanilla, mix about 1 minute. Add oat mixture and stir just until incorporated. Stir in chocolate and ginger.
4. Use two spoons to drop round tablespoons of dough about 2 inches apart on prepared baking sheets. Bake cookies for 14-16 minutes on the top shelf. Cool on sheets about 5 minutes, then transfer to cooling racks to cool completely. Continue making cookies with remaining dough and cooled sheets.

Store Cookies - To keep cookies fresh, pack the cookies in sealed containers with waxed paper between each layer.

Oatmeal Cookies – I am most definitely going to make this recipe again with white chocolate chips and cranberries. Mix up these cookies by replacing the chocolate chips and ginger with your favorite oatmeal cookie fillings like raisins, nuts and peanut butter chips. Enjoy!

Gluten Free Chicken Salad Sandwich

This fresh, easy chicken salad sandwich is the perfect lunch that can be easily served on gluten free bread, and served on traditional sliced bread for gluten eating friends and family.

Start to Finish: 10 minutes
Yields 4 sandwiches

Ingredients
8 slices ‘Udi’s Whole Grain Bread’
3/4 cup cooked chicken, shredded or cut into small pieces
1/3 cup light mayonnaise
1/2 cup celery, thinly sliced
3 Tbsp green onions, sliced
3 Tbsp silvered almonds, sliced
1/2 cup red grapes, sliced (optional)
Salt and pepper to taste

Directions
1. In medium bowl, add chicken, mayonnaise, celery, green onions, almonds and grapes. Mix well. Salt and pepper to taste.
2. Toast the slices of bread in a toaster or toaster oven.
3. Spread the chicken mixture onto the slices of bread to complete the sandwiches. Top with lettuce, tomato and cheese if desired. Serve with chips and fresh veggies. Enjoy!

Gluten Free Pudding Dirt Cups

Dirt Cups were one of my favorite recipes to make when I was a kid. This recipe includes the gluten free version of Oreo cookies, chocolate pudding and gummy worms. Your kids will have a blast making this simple recipe with you.

Start to Finish: 10 minutes
Serves 5

Ingredients
15 cookies or 2 rows of KinniToo’s Chocolate Vanilla Sandwich Cookies
1 (3 oz) box Sugar-Free JELL-O chocolate pudding
3 cups skim milk
8 gummy worms

Directions
1. Transfer cookies to a sealed plastic bag. Smash cookies with rolling pin until crushed into crumbs. Set aside.
2. Mix instant chocolate pudding with milk as directed on package.
3. In 5 small cups, add half the cookies crumbs to the cups. Scoop pudding into cups, adding a gummy worm in the middle of the process. Sprinkle the rest of the cookie crumbs to the cups. Top each cup with a gummy worm. Enjoy!

Redbridge Gluten Free Beer Review

Redbridge is my gluten free beer of choice; this delicious, high quality beer is the perfect recommendation for anyone transitioning to a gluten free life.

This beer is made from sorghum, a safe grain for those allergic to wheat or gluten, and no cross-contamination takes place in the brewing process to preserve its purity. Redbridge beer has a rich, well-balanced flavor that goes down smooth.

The price was very reasonable ($8.99) for a six-pack of gluten free beer. I personally enjoy drinking this beer right out of the bottle more than the glass. For some reason when I drink this beer out of a glass it doesn’t taste as full-bodied compared to the bottle.

This beer reminds me a lot of many traditional gluten lagers such as Heinekan. There is a moderately hopped taste to this beer with a smooth, crisp finish. I’m hoping someday Redbridge could come out with a cheap, mass produced gluten free beer.

One thing I really enjoy about Redbridge, besides their beer, is that Redbridge and the non-profit National Foundation for Celiac Awareness (NFCA) are working together to build a partnership to increase awareness of Celiac Disease, and funding dedicated to finding a cure for Celiac Disease.

Fresh Gluten Free Raspberry Bars


This flavorful, mouthwatering dessert is a great summer time recipe for any event. The lemon zest in this dish really brings out the refreshing raspberry flavor.

Prep Time: 20 minutes
Bake Time: 45-50 minutes
Chill Time: 3 hours
Serves 16

Ingredients
1 cup (2 sticks) unsalted butter, cut in 1-inch cubes
1/2 tsp salt
1 (12 oz) box gluten free sugar cookies
1/2 cup gluten free multipurpose flour or tapioca flour
3/4 cup seedless raspberry jam or preserves
2 cups (1 pint) fresh raspberries
1 (8 oz) pkg cream cheese, softened
1/2 cup sugar
1 Tbsp gluten free multipurpose flour or Tapioca flour
2 large eggs
2 Tbsp finely shredded lemon peel (zest)
2 Tbsp freshly squeezed lemon juice
1/2 tsp vanilla extract
2 Tbsp powdered sugar (optional topping)

Directions
1. Preheat oven to 350 degrees. Line a 13x9x2-inch baking pan with aluminum foil, leaving extra foil extending over ends; set aside.
2. In large bowl, beat the butter until it just begins to blend, about 30 seconds. Add salt, just mix it-don’t try to cream it. Add cookie mix; mix with your hands until dough is an even consistency, and can be made into a ball. Mix well to prevent crumbling, don’t be afraid to over mix this recipe.
3. Spread dough onto prepared pan; use fingers to press dough into an even layer. Bake 20 minutes or until dough has begun to puff. Cool for 5 minutes. Lightly brush parameter of the crust with softened butter to keep crust from sticking to the foil.
4. Spread jam evenly over crust. Sprinkle evenly with raspberries.
5. In large bowl, beat cream cheese. Mix in granulated sugar and flour until blended. Add egg, lemon zest, lemon juice and vanilla, mix well. Beat until smooth. Pour cream cheese mixture on top of prepared crust and move the pan side-to-side to spread evenly.
6. Bake in oven at 350 degrees for 25-30 minutes more. Raspberry bars are ready when the top appears firm. Chill on wire rack for 1 hour. Transfer to refrigerator for 2 hours. Carefully remove bars from pan by lifting the bars with the extra aluminum foil on the sides. Place bars on serving dish. Cut into 16 bars or smaller bite size pieces to share. Enjoy!

Olive Garden Gluten Free Pumpkin Cheesecake

This pumpkin cheesecake is the perfect dessert for Thanksgiving and fall festivities. This recipe tastes just like the Olive Garden Pumpkin Cheesecake – only gluten free.

Prep Time: 20 minutes
Cook & Chill Time: 5-1/2 hours
Yields 10-12 slices

Ingredients
Crust
1 ½ cup gingersnap cookie crumbs
6 Tbsp unsalted butter, melted

Filling
3 pkgs (8 oz) cream cheese, at room temperature
1 cup sugar
1 tsp cinnamon
3/4 tsp ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 1/4 cup pumpkin puree
5 large eggs
1/2 cup heavy cream

Toppings
whipped cream
gingersnap cookie crumbs
caramel drizzle

Directions
1. Grease a 9-inch spring form pan. Combine gingersnap crumbs and butter in bowl, mix well. Press mixture firmly into prepared pan and refrigerate.
2. Preheat oven to 350 degrees.
3. In large bowl, beat cream cheese, sugar and spices until smooth, light in texture. Add pumpkin puree and mix until just blended. Stir in eggs one at a time, scraping side of bowl after each addition. Stir in cream.
4. Pour batter into crust. Bake in preheated oven for 50 minutes. Let cheesecake remain in warm oven for another 45 minutes. Cover and refrigerate for at least 4 hours. Top each piece with whipped cream, cookie crumbs and caramel drizzle when serving. Enjoy!

Cheesecake will keep for 4-5 days in refrigerator and 2 weeks in the freezer. If you don’t have gluten free ginger snap cookies, simply crush regular short bread cookies into crumbs. The shortbread cookies will taste just as delicious for the crust.

Gluten Free Best Ever Corn Dogs

Corn dogs are a great meal for the whole family to enjoy. I came across this recipe on Gluten Freely. This recipe was surprisingly delicious and fairly easy to make.

Start to Finish: 30 minutes
Serves 6-8

Ingredients
Oil for deep frying
1/2 cup gluten free cornmeal
1/2 cups Bisquick Gluten Free mix
2 Tbsp sugar
1 egg, beaten
2/3 cup milk
1 (16 oz) pkg gluten free hot dogs
Sticks, if desired

Directions
1. In deep fryer or heavy saucepan, heat 3-inches oil to 375°.
2. In medium bowl, mix cornmeal, Bisquick and sugar. Beat in egg and milk with whisk. Batter consistency will be of thick pancake batter. If needed, add extra Bisquick mix to thicken.  Place hot dogs on sticks, or cut into bite-sized pieces. Roll hot dogs in batter until covered.
3. Fry in hot oil 3-5 minutes or until golden brown. Hot dogs may need to be flipped once. Drain on paper towel-lined plate. This recipe makes enough batter for 1 package hot dogs. Serve with ketchup and mustard. Enjoy!

Double this recipe and freeze the leftovers for a busy day. Allow corn dogs to cool to room temperature, then place corn dogs on baking sheet and freeze. Once corn dogs are fully frozen, put them into freezer bags. Reheat the corn dogs in oven at 400° for about 20 minutes.

This incredible meal includes chicken, corn tortillas and a deluxe cream cheese filling. Not only is it simply divine, it’s also fairly simple to make. 

Prep Time: 30 minutes
Cook Time: 25-30 minutes
Serves 6-8

Ingredients
1 large onion, chopped
2 Tbsp olive oil
1 tsp chili powder
1 tsp garlic powder
1 tsp ground cumin
1 (8 0z) cream cheese
2 lbs boneless-skinless chicken, cooked and shredded
3/4 cup salsa
1 (8oz) pkg mild cheddar cheese, shredded
16 corn tortillas
2 (14 oz) cans enchilada sauce

Directions
1. Preheat oven to 350°.  Have one 9×13-inch  baking dish ready. Spread one can of enchilada sauce on the bottom of pan.
2. In large saucepan, saute onion in oil over medium-high for 5 minutes or until onions are translucent. Add chili powder, garlic powder and ground cumin.
3. Add cream cheese to large saucepan, cook over low-heat stirring constantly until melted. Add chicken and salsa, stirring over medium-high heat for 2-3 minutes until hot. Remove from heat, add 1-1/4 cups of cheddar cheese.
4. Spoon 1/3 cup mixture into each corn tortilla. Roll up and place seam side down in pan. Top with remaining enchilada sauce. Sprinkle with remaining cheese. Bake 25-30. Enjoy!

Cook the chicken on the grill while preparing the mix or simply cook the chicken ahead of time. I usually prepare the enchilada mix, while my spouse grills the chicken. Don’t be afraid to put your man to work, too.
