Traditional Gluten Free Chicken Enchiladas

These traditional, crowd-pleasing enchiladas use simple ingredients, and are fairly easy to make.

Prep Time: 30 minutes
Cook Time: 15 minutes
Serves 6

Ingredients
1 lb potatoes, peeled & cut into 1-inch cubes
1/3 cup red onions, chopped
2 lbs boneless, skinless chickens breasts
1 tsp Mexican seasoning
1/2 cup peas
1/2 cup corn
16 corn tortillas
Salt and pepper to taste
1/2 cup mild cheddar cheese, shredded

Toppings: shredded mild cheddar cheese, onions, sour cream, cilantro and salsa.

Directions
1. Preheat oven to 350 degrees. Set aside a 9×13-inch pan.
1. In large saucepan, fill 2/3 of pan with water and bring to a boil. Cook potatoes in hot water for 10 minutes or until cooked through. Meanwhile, in a small saucepan; sauté onions with olive oil for about 5 minutes. Set saucepan aside for tortillas. Drain cooked potatoes; cut into 1/4-inch size cubes, set aside.
2. In large skillet, heat olive oil and cook chicken over high heat for 5 minutes on each side or until cooked through with no pink. Transfer chicken to cutting board and shred into bite-size pieces.
3. In large saucepan of potatoes, add red onions, shredded chicken, peas, and corn. Mix well; salt and pepper to taste.
4. In small saucepan, warm oil over high-heat. Cook tortillas in hot oil for 5-10 seconds on each side. Transfer cooked tortillas to paper towel; dab with paper towel to remove excess oil. Stuff tortillas with enchilada mixture and sprinkle with cheese. Roll-up tortillas and place them folded side down in 9×13 pan.
5. Bake in preheat oven for 15 minutes or until enchiladas are warm. Serve with desired toppings. Enjoy!

Double this batch – This recipe stores easily and is easy to reheat. Double this recipe and simply freeze desired amount of enchiladas in a sealed Ziploc bag before baking. Let the enchiladas thaw on the counter or in the fridge when ready to eat. Bake in the oven as directed above for 15 minutes or until enchiladas are warm.

Storage – Store leftover baked enchiladas in airtight containers in the fridge, and simply reheat in the microwave for 30-40 seconds. Store the leftovers in individual containers, instead of large containers, for easy-to-grab meals and snacks for on-the-go .

Gluten Free Chicken Salad Sandwich

This fresh, easy chicken salad sandwich is the perfect lunch that can be easily served on gluten free bread, and served on traditional sliced bread for gluten eating friends and family.

Start to Finish: 10 minutes
Yields 4 sandwiches

Ingredients
8 slices ‘Udi’s Whole Grain Bread’
3/4 cup cooked chicken, shredded or cut into small pieces
1/3 cup light mayonnaise
1/2 cup celery, thinly sliced
3 Tbsp green onions, sliced
3 Tbsp silvered almonds, sliced
1/2 cup red grapes, sliced (optional)
Salt and pepper to taste

Directions
1. In medium bowl, add chicken, mayonnaise, celery, green onions, almonds and grapes. Mix well. Salt and pepper to taste.
2. Toast the slices of bread in a toaster or toaster oven.
3. Spread the chicken mixture onto the slices of bread to complete the sandwiches. Top with lettuce, tomato and cheese if desired. Serve with chips and fresh veggies. Enjoy!

Gluten Free Chicken Enchilada Bake

This incredible meal includes chicken, corn tortillas and a deluxe cream cheese filling. Not only is it simply divine, it’s also fairly simple to make. 

Prep Time: 30 minutes
Cook Time: 25-30 minutes
Serves 6-8

Ingredients
1 large onion, chopped
2 Tbsp olive oil
1 tsp chili powder
1 tsp garlic powder
1 tsp ground cumin
1 (8 0z) cream cheese
2 lbs boneless-skinless chicken, cooked and shredded
3/4 cup salsa
1 (8oz) pkg mild cheddar cheese, shredded
16 corn tortillas
2 (14 oz) cans enchilada sauce

Directions
1. Preheat oven to 350°.  Have one 9×13-inch  baking dish ready. Spread one can of enchilada sauce on the bottom of pan.
2. In large saucepan, saute onion in oil over medium-high for 5 minutes or until onions are translucent. Add chili powder, garlic powder and ground cumin.
3. Add cream cheese to large saucepan, cook over low-heat stirring constantly until melted. Add chicken and salsa, stirring over medium-high heat for 2-3 minutes until hot. Remove from heat, add 1-1/4 cups of cheddar cheese.
4. Spoon 1/3 cup mixture into each corn tortilla. Roll up and place seam side down in pan. Top with remaining enchilada sauce. Sprinkle with remaining cheese. Bake 25-30. Enjoy!

Cook the chicken on the grill while preparing the mix or simply cook the chicken ahead of time. I usually prepare the enchilada mix, while my spouse grills the chicken. Don’t be afraid to put your man to work, too.

Gluten Free Supreme Pizza

Personally, there’s nothing like a tasty, home-cooked pizza on a Friday night. But since we’re heading to Chicago this weekend, I made it tonight. Growing up my mom would split up the pizza crust and let us top our own pizzas. Have some family fun this weekend with your food and let your kids add their own toppings. Enjoy! 

Prep Time: 20 min
Cook Time: 15 min
Yields: two pizzas, 12 to 16 slices

Ingredients
1 (18.25 oz) package ‘King Arthur’s Flour’ Gluten Free Pizza Crust Mix
1 1/4 cups warm water
3 large eggs
4 tbsp extra virgin olive oil
2 cups pizza sauce
1/2 cup red onion, diced
1/2 cup green pepper, diced
1 lb ground sausage, cooked
2 cups shredded mozzarella, divided
1 cup shredded cheddar jack cheese, divided
1/4 cup jalapenos (optional)
1/4 cup black olives, sliced (optional)
dash of fresh basil (optional)

Directions
1. Preheat oven to 400 degrees.
2. Prepare pizza crust as package directs with water, eggs and olive oil.
3. Top each pizza crust with pizza sauce, red onion, green pepper, sausage, cheese, jalapenos, black olives and fresh basil.
4. Bake for 15 to 18 minutes. Cool and enjoy!

To make this dish spicier; use spicy ground Italian sausage, and top with spicy jalapenos and red pepper flakes. Be sure to double check the Italian sausage ingredients, I unfortunately made this mistake and got glutened :(

Gluten Free Taco Pizza

Taco Pizza is a true Midwest Favorite! This pizza is great to share with friends and family. It’s two of my favorites; tacos and pizza in one tasty dish.

Prep Time: 20 min
Cook Time: 15 min
Yields: two pizzas, 12 to 16 slices

Ingredients
1 (18.25 oz) package ‘Stashu’s’ Gluten Free Pizza Crust Mix
1 1/4 cups warm water
3 large eggs
4 tbsp extra virgin olive oil
2 cups refried beans
1 lb ground sausage, cooked
2 cups shredded mozzarella, divided
1 cup shredded cheddar jack cheese, divided
1/2 cup red onion, diced
1/2 cup lettuce, shredded
2 cups Cool Ranch Doritos, quarter size pieces
1/2 cup Roma tomatoes, seeded and diced (optional)

Directions
1. Preheat oven to 400 degrees.
2. Prepare pizza crust as package directs with water, eggs and olive oil.
3. Top each pizza crust with refried beans, sausage, cheese, onion, lettuce, Doritos and tomatoes.
4. Bake for 15 to 18 minutes. Cool and enjoy!

To make this dish spicier; use spicy ground sausage, and top with spicy jalapenos and red pepper flakes.

If desired, dress this pizza with ranch dressing, taco sauce or hot sauce.

Ingredients
1 (18.25 oz) package ‘King Arthur’s Flour’ Gluten Free Pizza Crust Mix
1 1/4 cups warm water
3 large eggs
4 tbsp extra virgin olive oil
2 cups Sweet & Zesty gluten free BBQ Sauce (or your favorite brand)
1/2 cup red onion, diced
1 (6 oz) package grilled chicken, shredded
2 cups shredded mozzarella, divided
1 cup shredded cheddar jack cheese, divided
1/4 cup jalapenos (optional)

Directions
1. Preheat oven to 400 degrees.
2. Prepare pizza crust as package directs with water, eggs and olive oil.
3. Top each pizza crust with BBQ sauce, red onion, chicken, cheeses and jalapenos.
4. Bake for 15 to 18 minutes. Cool and enjoy!

To make this dish spicier; top with spicy jalapenos and red pepper flakes.

Extremely Cheesy Gluten Free Potatoes

This is my favorite dish for any occasion. This dish always goes fast, and I never have leftovers to take home. Even my gluten-eating friends make this recipe for events and family dinners.

Prep Time: 10 min
Cook Time: 30-60 min
Serves 12

Ingredients
1 (32oz) pkg cubed hash-browns, thawed
2 cups Velvetta cheese
1 (15oz) can gluten free cream chicken soup
1 (16oz) sour cream
1/2 cup butter, melted
3 Tbs onions, diced
1 cup mild cheddar cheese

Toppings
2 cups corn flakes
1/4 cup butter, melted

Oven Directions
1. Preheat oven to 350°. Grease 9×13 pan with cooking spray or butter.
2. In large bow, add all ingredients except toppings, mix well.
3. In small bowl, add corn flakes and 1/4 cup melted butter, mix well.
4. Add cheesy potato mixture to prepared pan, spread evenly. Sprinkle with corn flakes toppings mix.
5. Bake for 30-60 min, or until top becomes golden brown.

Please note: cooking time depends on how defrosted the hash browns are. Defrosted hash-brown’s mix takes around 30 min, while frozen hash-brown’s mix takes around 60 min.

Crock-Pot Directions
1. Grease large crock-pot with cooking spray or butter.
2. In large bow, add all ingredients except toppings, mix well.
3. In small bowl, add corn flakes and 1/4 cup melted butter, mix well.
4. Add cheesy potato mixture to prepared crock-pot, spread evenly. Sprinkle with corn flakes toppings mix.
5. Bake on low for 3 1/2 hours. Turn on high for the last 1/2 hour and cook until top becomes golden brown.

This dish makes great left overs, but for families of four can make a half portion of this recipe. Simply use only half the amount of requested ingredients in a 8×8 pan. Then just follow the cooking directions above as directed.

I have fallen in love with this recipe! Not only does this sauce taste amazing, it is quick, easy and inexpensive to make. This recipe makes a lot for only around $15, and leftovers store great in the freezer for a busy day. I hope you enjoy this recipe as much as I have!

Prep Time: 10 min
Start to Finish: 30 min
Serves 10

Ingredients
1 small onion, chopped
1 lb Italian sausage
1/4 cup olive oil
1 (46oz) can tomato juice
1 (8oz) can tomato sauce
2 (12oz) can tomato paste
2 tsp oregano
2 tsp sweet leaf basil
2 1/2 tsp garlic salt
3-4 whole bay leaves
2 cups sugar
1 pkg mushrooms (optional)
1 tsp red pepper flakes (optional)

Directions
1. In large sauce pan, simmer olive oil and small onion until onions are soft, about 5 min.
2. In separate pan, cook Italian sausage on medium high until completely brown. 3. Add all of the ingredients and sausage to large sauce pan. Bring to a boil and continue to cook on low for 20 min.
4. Meanwhile, begin cooking gluten free noodles of your choice as package directs. Serve spaghetti sauce with gluten-free noodles of your choice.

This recipe makes enough sauce for two lasagnas. Freeze any leftovers in an airtight container for a fulfilling meal on a busy day.

Gluten Free Corn Bread

Prep Time: 5 min

Ingredients
2 sticks margarine, melted
1 cup milk
1 cup sugar
2 eggs
2 cups gluten-free Bisquick
1/2  tsp. baking soda
4 Tbs. corn meal

Directions
1. Preheat oven to 350°. Grease 9×13-inch pan.
2. Mix all ingredients in bowl. Batter will appear lumpy. Pour gluten free batter into a greased 13in x 9in pan.
3. Bake in preheated oven for 30 minutes or until golden brown on top.

Add Corn – If you enjoy fresh corn in your corn bread, add 1/2 cup of corn.
Add Jalapenos – If you enjoy spicy food, spice up your corn bread with a fresh seeded and finely chopped jalapeno.
