Easy Gluten Free Croutons

This real easy recipe shows you how to make tender, satisfying croutons out of store bought sliced gluten free bread in minutes. Get great use out of all your sliced gluten free bread, butts of bread included, by turning it into croutons.

Start to Finish: 10 minutes
Serves 2

Ingredients
2 slices of ‘Udi’s Whole Grain’ gluten free bread, thawed if frozen
2 tbsp olive oil

Stove Directions
1.  In medium skillet, heat olive oil over medium-high heat.
2. Add bread to skillet; cook on each side until the bread begins to brown evenly, about 4 minutes on each side.
3. Transfer the bread to cutting board. Cut the bread into 1-inch cubes, about 9 cubes per slice of bread.

Toaster Oven Directions
1. Lightly brush bread with olive oil.
2. Bake in toaster over a little longer than you would for toast; about 4 minutes at 450°. Keep a close eye to ensure the bread doesn’t come out burnt.
3. Transfer the bread to cutting board. Cut the bread into 1-inch cubes, about 9 cubes per slice of bread.

Croutons – Store croutons in a Ziploc bag to use for salads and soups during the week.

Bread - Any sliced bread can be used for this recipe. Store gluten free bread in the freezer if you don’t plan to use it any time soon, and use a toaster oven to quickly thaw the bread.

I enjoy making a few slices over the weekend, so I have easy access to great tasting croutons for my soups and salads during the week. Enjoy!

The Best Gluten Free Pumpkin Bread

Truly one of my all time favorite recipes! The main reason I always make several loaves of this Pumpkin Bread is because it freezes so well. I can keep it in my freezer for several weeks and then simply set the loaf out on the counter to thaw for breakfast the night before. This delicious gluten free bread tastes as moist and fresh as the day I made it.

This recipe works great with three-2lb loaf disposable aluminum pans.  These pans are easy to give away, freeze and reuse.

Prep Time: 10 min.
Cook Time: 1 hour
Makes 2-3 loaves

Ingredients
3 ½ cups ‘King Arthur Flour’ multipurpose gluten free flour
2 tsp baking soda
1 ½ tsp cinnamon
1 tsp pumpkin pie spice
3 cups sugar
1 cup vegetable oil
4 large eggs
2/3 cup water
2 cups Libby’s pumpkin puree
3/4 cup walnuts, chopped (optional)

Directions
1. Preheat oven to 350°. Grease and lightly flour 3 bread pans.
2. In large bowl, add all dry ingredients, mix well.
3. Add all other ingredients, mix until smooth and creamy.
4. Bake in preheated over for 1 hour or until toothpick poked in the middle of each loaf comes out clean.  Cool in pan. Enjoy!

I usually end up giving away the other two loaves, because otherwise I will eat all them all myself. This recipe truly is too delicious.

Easy Gluten Free Blueberry Muffins

Prep Time: 10 min
Cook Time: 40 min
Yields 12

Ingredients
4 Tbs margarine, melted
3 eggs
2 cups sugar
2/3 cup milk
1 (15 oz) gluten free cake mix
1/2 cup gluten free flour
1 Tbs vanilla
3/4 cup blueberry pie filling

Directions
1. Preheat oven to 350 degrees. Insert paper cups into two: 12 count muffin pans.
2. In large bowl, add eggs, margarine and sugar. Stir together until the mixture is smooth and creamy. Add the milk, cake mix, flour and vanilla. Mix together until well combined, about 2 minutes.
3. Scoop batter into prepared muffin pan; fill cups 2/3 with batter to allow room to expand. Spoon the pie filling on top of batter.
4. Bake in oven for 40 min or until inserted toothpick comes out clean. Cool and enjoy!

Store the muffins in an air tight container to keep them nice and moist. This recipe can be made with any pie filling of your choice. Try using your favorite pie filling with this muffin recipe today!

This recipe can be used to make fun size mini muffins too. These mini muffins make a great snack for any holiday event. Simply use mini muffin cups in a mini muffin pan, and follow the directions included above.

Ingredients
Cake
3 eggs
4 Tablespoons margarine or butter, melted
1 1/2 cups sugar
2/3 cup milk
1 (15oz) package Betty Crocker gluten free cake mix
1/2 cup gluten free flour
1 Tablespoon vanilla

Streusel
1 Tablespoon margarine or butter, melted
1/4 cup Gluten Free Bisquick
3/4 cup cranberries, chopped
1/2 cup pecans, chopped

Directions
1. Preheat oven to 350°. Grease 9-inch spring form pan.
2.  In large bowl, add eggs, 4 tablespoons margarine and sugar. Stir together until the mixture is smooth and creamy. Add the milk, cake mix, flour and vanilla. Mix together until well combined, about 2 minutes. Pour batter into prepared pan.
3. In small bowl, add 1 Tablespoon margarine and Gluten Free Bisquick, stir well. Add cranberries and pecans to mixture, stir until well mixed. Spoon the mixture on top of batter.
4. Bake in oven for 40 minutes or until inserted toothpick comes out clean. Cool and enjoy! Store the coffee cake in an air tight container to keep nice and moist.

This recipe can also be used to make 24 regular muffins. Simply use regular size paper cups in two 12 cup muffin pans, and follow instructions included above. If you are short on time; replace the streusel with any gluten free granola of your choice. Enjoy!

1/3 cup butter
1/4 cup sugar
3 eggs
1/2 tsp vanilla
2 cups cool whip or whipped cream
Hershey’s Chocolate Drizzle (optional)

Directions
1. Preheat oven to 425°. Grease large cookie sheet.
2. In medium bowl, add Bisquick mix, sugar, butter. Mix in butter with pastry blend or fork. Add milk, eggs and vanilla, stir well. Scoop 8 spoonfuls onto greased cookie sheet.
3. Bake 10-12 min or golden brown on top. Cool 5 min. Split biscuit in half, fill and top with strawberries and whipped cream. Drizzle chocolate on top, serve immediately.

These gluten free biscuits keep well stored in a airtight container. Reheat biscuits in microwave for 15 sec before eating leftovers. This helps bring back the warm, fresh out of the oven taste.

Gluten Free Classic Coffee Cake

Just like the classic coffee cake Starbucks sells with a tasty twist. This is probably more of an afternoon snack than a breakfast, but I’ll let you decide.

Ingredients
Streusel
1/3 cup gluten-free Bisquick mix
1/2 cup packed brown sugar
3/4 tsp ground cinnamon
1/4 cup firm butter or margarine

Coffee Cake
1 3/4 cups gluten-free Bisquick mix
3 Tbs granulated sugar
2/3 cup milk
2 tsp vanilla
3 large eggs

Frosting
2 cups powdered sugar
1 Tbs butter, melted
1 tsp vanilla

Directions
1. Preheat oven to 350º. Grease a 9×9-inch spring form pan.
2. In small bowl, add all streusel ingredients. Mix with pastry blender, fork or hands until mixture is crumbly; set aside.
3. In medium bowl, add all coffee cake ingredients, stir until blended. Spread coffee cake mixture in prepared pan; sprinkle with toppings.
4. Bake 30 min or until golden brown. Cool completely
5. While coffee cake is baking, in a small bowl add frosting ingredients. Mix until smooth and creamy. Pour over coffee cake once it has cooled completely. Serve right aware or cover in sealed container until ready.

All out of milk? No worries, replace the milk in this recipe with water for the same great tasting breakfast or afternoon snack.

To reheat this coffee cake put a slice in the microwave for 15 sec on high. This will bring back that fresh, hot out of the oven taste. Enjoy!

Prep Time: 5 min
Start to Finish: 35 min

Ingredients
2 sticks margarine, melted
1 cup milk
1 cup sugar
2 eggs
2 cups gluten-free Bisquick
1/2  tsp. baking soda
4 Tbs. corn meal

Directions
1. Preheat oven to 350°. Grease 9×13-inch pan.
2. Mix all ingredients in bowl. Batter will appear lumpy. Pour gluten free batter into a greased 13in x 9in pan.
3. Bake in preheated oven for 30 minutes or until golden brown on top.

Add Corn – If you enjoy fresh corn in your corn bread, add 1/2 cup of corn.
Add Jalapenos – If you enjoy spicy food, spice up your corn bread with a fresh seeded and finely chopped jalapeno.
