Homemade Orange Julius Recipes


My new favorite way to cool off  is with a refreshing Homemade Orange Julius.

Start to Finish: 5 minutes
Yields 4 small glasses

Orange Julius
Ingredients

6 oz (2/3 cup) frozen orange juice concentrate
1 cup milk
1 cup water or soda water
1/4 cup sugar
1/4 cup powdered sugar
1 tsp vanilla extract
1-1/2 cups ice cubes

Directions
1. Combine all ingredients except ice cubes to blender.
2. Blend for 1-2 minutes. Adding ice cubes one at a time. Pour mixture into glasses. Enjoy!

 

Strawberry Julius
Ingredients

1 cup strawberries, thawed, frozen or fresh
1 cup milk
1 cup water or soda water
1/4 cup sugar
1/4 cup powdered sugar
1 tsp vanilla extract
1-1/2 cups ice cubes

Directions
1. Combine all ingredients except ice cubes to blender.
2. Blend for 1-2 minutes. Adding ice cubes one at a time. Pour mixture into glasses. Enjoy!

Strawberry Orange Julius – Mix it up for a Strawberry Orange Julius by following the directions above and use 1/2 cup strawberries with 3 oz (1/3 cup) frozen orange juice concentrate. Have fun.

Gluten Free Chicken Salad Sandwich

This fresh, easy chicken salad sandwich is the perfect lunch that can be easily served on gluten free bread, and served on traditional sliced bread for gluten eating friends and family.

Start to Finish: 10 minutes
Yields 4 sandwiches

Ingredients
8 slices ‘Udi’s Whole Grain Bread’
3/4 cup cooked chicken, shredded or cut into small pieces
1/3 cup light mayonnaise
1/2 cup celery, thinly sliced
3 Tbsp green onions, sliced
3 Tbsp silvered almonds, sliced
1/2 cup red grapes, sliced (optional)
Salt and pepper to taste

Directions
1. In medium bowl, add chicken, mayonnaise, celery, green onions, almonds and grapes. Mix well. Salt and pepper to taste.
2. Toast the slices of bread in a toaster or toaster oven.
3. Spread the chicken mixture onto the slices of bread to complete the sandwiches. Top with lettuce, tomato and cheese if desired. Serve with chips and fresh veggies. Enjoy!

JELL-O Majic Mousse

Mix up your tradition JELL-O recipe with this fun, easy recipe.

Prep Time: 10 minutes
Chill Time: 8 hours
Yields 5 ½ cups

Ingredients
1-1/2 cups boiling water
1 pkg (3 oz) JELL-O Brand Gelatin
1 tub (8 oz) COOL WHIP Whipped Topping, frozen or thawed

Directions
1. Add boiling water to gelatin mix in large bowl; stir 2 minutes or until completely dissolved.
2. Remove from heat, whisk in COOL WHIP until blended.
3. Refrigerate 8 hours or until firm.

JELL-O makes a great, light snack with lunch or bedtime treat. Have some fun with your kids and use cookie stencils to cut cute shapes out of the jello. Enjoy!

Cajun Gluten Free Pasta Toss with Chicken

Start to Finish: 30 min
Serves: 4

Ingredients
1 (12oz) gluten-free penne
3 Tbs unsalted butter
1 Tbs gluten free all-purpose flour
1 1/2 cups half-and-half
1/2 cup grated parmesan cheese
1 pd boneless, skinless chicken breasts
1 1/2 Tbs Cajun spice blend
1/4 tsp cayenne pepper (optional)
2 tsp vegetable oil
2 firm-ripe Roma tomatoes, cored and sliced
1/2 tsp red pepper flakes (optional)

Directions
1. Bring large saucepan of salted water to boil. Cook gluten free Penne according to package directions.
2. In medium saucepan, melt butter over medium heat. Add flour; stir for 1 min. Add half-and-half; stir until thickened, 6 min. Remove from heat; add Parmesan,  red pepper flakes, cover.
3. Rub cajun and cayenne evenly onto chicken. Warm oil in nonstick skillet over medium high heat. Add chicken and cook, turning once, until no longer pink in center, 6-8 min. Slice chicken into strips.
4. In large serving bowl, toss pasta with sauce. Top with chicken and tomatoes. Enjoy!

Spicier For those you who enjoy spicy food, add 1/2 tsp red pepper flakes  to give this recipe a real kick!

Supreme Gluten Free Chicken Fajitas

These phenomenal gluten free chicken fajitas include onions, green peppers, zucchini and more.

Start to Finish: 20 min
Serves: 4

Ingredients
2 Tbs canola oil
2 cloves garlic
1 tsp chili powder
3 boneless chicken breast halves, cut in thin strips
1 medium onion, cut in strips
3 medium bell peppers, seeded/cut in strips
1 zucchini, cut in strips
2 jalapenos, chopped (optional)
8 corn tortillas
1/2 cup sour cream (optional)
1 cup refried beans (optional)
1/2 cup salsa (optional)
1 bunch cilantro (optional)

Directions
1. Heat oil in heavy skillet. Add chicken strips and chili powder over high heat, stir constantly for 5 min, or until cooked. Drain and set aside.
2. In the empty skillet, add onion, garlic and  jalapenos to oil in pan and saute over high heat for 2 min. Add bell peppers and zucchini; cook over high heat for 4 min, or until vegetables have a blackened look around the edges. Return chicken to pan and heat until sizzling hot.
3. While the chicken is reheating wrap the corn tortillas in a damp paper towel and microwave for 30 sec. Serve right away with sour cream, cilantro, refried beans and salsa, if desired.

◊ To speed up the cooking process for this recipe purchase one of each (6oz) precooked chicken and steak strips from the store. They are not as budget friendly, but they are great way to whip up a fast, tasty meal.

Gluten Free Caramel Puffed Corn

Indulge on this inexpensive, easy gluten free snack the whole family will enjoy. I brought this into work the other day and the whole bowl was gone within minutes. This is a great treat to bring to parties or keep to yourself for a bedtime snack.

Prep Time: 10 min
Start to Finish: 1 hour 10 min

Ingredients
1-8 oz bag ‘Kitchen Cooked’ puffed corn
1/3 cup margarine or butter
1-1/2 cups brown sugar, packed
1/3 cup light corn syrup
1 tsp salt
1 tsp baking soda
1 tsp vanilla
1 cup pecans (optional)

Directions
1. Preheat oven to 250°. Grease a large roasting pan. Pour puffed corn into pan.
2. Melt butter in large saucepan. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly for 5 minutes. Remove from heat. Stir in baking soda; this will cause the mixture to thicken and rise. Stir in vanilla.
3. Immediately pour  caramel over puffed corn in prepared large roasting pan. Add pecans and mix well.
4. Bake for one hour, stirring every 15 min. Remove from oven.
5. Cool completely on wax paper. Break up any clumps and store in tightly covered container.

We eat a lot of ice cream at our house, so I saved a few of the 1 gallon ice cream containers to store snacks like this one in. This makes the delicious puffed caramel corn simple to store and easy access. Enjoy!
