Gluten Free Chicken Dumplings

This comfort food makes a great meal the whole family will enjoy. They won’t even be able to tell its gluten free. I like to make this meal on Sunday’s, so there is plenty of yummy leftovers for lunch during the week.

Prep Time: 30 min
Cook Time: 2 hours
Serves 8

1 (4-5 lb) ready-to-cook stewing chicken
3 cups water
1 bay leaf
1 tsp salt
1/2 tsp pepper
1 medium onion, diced
2 1/2 cups chicken broth
1 (16oz) frozen mixed vegetables
3/4 cup milk
3 Tbs cornstarch

1 1/2 cups Bisquick Gluten Free mix
2/3 cup milk
4 Tbs butter, melted
2 eggs
2 Tbs fresh parsley, chopped

1. In large saucepan, combine chicken, water, onion, salt, pepper and bay leaf. Bring to a boil; simmer, covered, about 1 hour or until chicken is tender.
2. Remove chicken from broth; cook and remove meat from bones. Cut chicken into bite-size pieces; set aside. Skim excess fat from froth. Discard bay leaf. Bring broth to a boil. Add mixed vegetables and chicken.
3. In small bowl, mix milk and cornstarch until smooth; add into chicken mixture, stir well. Heat just to boiling.
4. Preheat over to 350°.
5. In small bowl, mix dumpling ingredients with fork until well blended. Separate dough into 8 rounded spoonfuls; gently drop dough onto boiling chicken mixture.
6. Cook over low heat, uncovered, for 10 min. Cover, cook 15 min longer. Enjoy!

Gluten Free Bisquick Review

Gluten Free Bisquick is one of my favorite products!

This product allows ease and flexibility in baking again. Cooking with Gluten Free Bisquick is almost fool-proof for any cook. This product offers tons of great  great tasting recipes everyone will enjoy! This product is so good it can be difficult to tell the difference between the gluten recipes and  the gluten free recipes.

To anyone new to cooking and baking gluten free, Gluten Free Bisquick recipes are great recipes to begin with. Gluten Free Bisquick can be found at your local grocery store in the health food section, gluten free section or next to the regular pancake and baking mixes. This product will range in price from 5-6 dollars  for a one pound (16oz) box. This may seem extremely high when comparing Gluten Free Bisquick’s prices vs. regular Bisquick’s prices, but I have found the ease and fool-proof flexibility in this product to be worth the price.

Gluten Free Bisquick makes baking easy again. Convert many of your old recipes Bisquick recipes by simply replacing regular Bisquick with Gluten Free Bisquick. That’s all!

1 cup Bisquick = 1 cup Gluten Free Bisquick

*Be sure to note that gluten free Bisquick is a rice flour not a wheat flour, so this conversion will not work for every recipe.

Gluten Free Classic Coffee Cake

Just like the classic coffee cake Starbucks sells with a tasty twist. This is probably more of an afternoon snack than a breakfast, but I’ll let you decide.

1/3 cup gluten-free Bisquick mix
1/2 cup packed brown sugar
3/4 tsp ground cinnamon
1/4 cup firm butter or margarine

Coffee Cake
1 3/4 cups gluten-free Bisquick mix
3 Tbs granulated sugar
2/3 cup milk
2 tsp vanilla
3 large eggs

2 cups powdered sugar
1 Tbs butter, melted
1 tsp vanilla

1. Preheat oven to 350º. Grease a 9×9-inch spring form pan.
2. In small bowl, add all streusel ingredients. Mix with pastry blender, fork or hands until mixture is crumbly; set aside.
3. In medium bowl, add all coffee cake ingredients, stir until blended. Spread coffee cake mixture in prepared pan; sprinkle with toppings.
4. Bake 30 min or until golden brown. Cool completely
5. While coffee cake is baking, in a small bowl add frosting ingredients. Mix until smooth and creamy. Pour over coffee cake once it has cooled completely. Serve right aware or cover in sealed container until ready.

All out of milk? No worries, replace the milk in this recipe with water for the same great tasting breakfast or afternoon snack.

To reheat this coffee cake put a slice in the microwave for 15 sec on high. This will bring back that fresh, hot out of the oven taste. Enjoy!

Cranberry Pecan Gluten Free Coffee Cake
This recipe is a family favorite, and can be enjoyed for breakfast or snack at any event.

Simple Gluten Free Apple Streusel

This gluten-free recipe is real simple to make and taste incredible.

Prep Time: 10 min
Cook Time: 45 min
Serves: 6

4 red apples
2 Tbs firm margarine
1/2 c Gluten Free Bisquick baking mix
1/2 c brown sugar, packed
1/2 tsp ground cinnamon
dash sugar

Note: peaches and apples can be used with their skins on or off.

1. Preheat oven to 350º.
2. Peel, core and slice apples. Set apples aside to soak in bowl filled with water. While apples are soaking, in small bowl add firm margarine, Gluten Free Bisquick, brown sugar and cinnamon. Mix ingredients together with hands until crumbly.
3. Drain apples and place them in baking dish, add dash of sugar and dash of cinnamon. Spread crumb mixture onto apples.
4. Bake for 45 min, or until apples are soft. Cool for 5 min, then serve.

Try advancing this recipe by topping the dessert with vanilla ice cream and caramel drizzle. You’ll be glad you did!

Gluten Free New York Cheesecake
This heavenly cheesecake is unlike ANY cheesecake you’ve had before.

Gluten Free Corn Bread

Prep Time: 5 min
Start to Finish: 35 min

2 sticks margarine, melted
1 cup milk
1 cup sugar
2 eggs
2 cups gluten-free Bisquick
1/2  tsp. baking soda
4 Tbs. corn meal

1. Preheat oven to 350°. Grease 9×13-inch pan.
2. Mix all ingredients in bowl. Batter will appear lumpy. Pour gluten free batter into a greased 13in x 9in pan.
3. Bake in preheated oven for 30 minutes or until golden brown on top.

Add Corn – If you enjoy fresh corn in your corn bread, add 1/2 cup of corn.
Add Jalapenos – If you enjoy spicy food, spice up your corn bread with a fresh seeded and finely chopped jalapeno.
